Those games are collaboration of different products. In Japan there are fighting games where there are many characters from different anime. Star Wars is almost only brand where there were enough ships to make this game work or they could make game where they take ships from different universes but I doubt this can happens because Hollywood and their licenses. Sure Imperials had superior ships but it has nothing to do World of Spaceship Star Wars. Most other franchises just don't (like SBY) have enough ships &/or enough different side to make it work without the game company inventing ships & sides. It would be hard to keep things 'per universe' & have incentive for anybody to tier-up the rebel ship-lines. The rebels don't have an equivalent to the ubiquitus Star Destroyer, never mind the larger ships. Problem is, per universe, the Empires' fleet is mostly built of VASTLY superior ships. One 'main,' one 'lesser.' But the lesser is full of ships from several different races. Star Wars would be.difficult, but probably doable.
